If you take a trip down to your local coffee house, you’ll find espresso based drinks being served everywhere and being consumed by everyone. It would seem that the non espresso based coffee beverages have been almost completely forgotten.

If you’re a latte or cappuccino drinker and like to take your coffee milky, You have to try the “cafè au lait”. The term “cafè au lait”, literally means “coffee with milk”. In this case half double strength coffee and half warmed milk.

To do this I would recommend using a medium strength coffee such as Colombian (Save blends for espresso). The original french advises using a drip machine but I’d personally use the press pot. Be sure to make the coffee double strength as it’s going to be diluted with warmed milk.

Whilst the coffee is brewing in the pot, warm up half a cup of milk in the microwave, I’d recommend whole milk with a little double cream, but I’m fat like that. When the milk is warmed give it a stir and pour over the double strength coffee. This mixture is delicious and children love it. If you’re feeling really French you could make it in a bowl and dip croissants in it for breakfast.
